Savoury Flapjack

I’ve made these flapjacks for numerous cookery demonstrations and most people can’t get their head around a savoury flapjack!

But once you eat, it will all make sense. A great filling alternative to bread.

Method

Step 1
Preheat oven to 170°C.
Step 2
Melt butter until runny but not boiling and combine with eggs and half of the cheese.
Step 3
Add onion and vegetables with the herbs and mix in the tomato purée, then combine with the oats.
Step 4
Spread out on a lined oven tray and top with the remaining grated cheese.
Step 5
Bake for 25 minutes.

Chef's Notes

Makes a great accompaniment to soup!
