Almond Milk
Shop bought almond milk can be hidden with nasties such as added sugar and bad fats, the clean brands are expensive but making your own is simple to do and much better for you and your pocket!

Method
Step 1
Place almonds in a bowl and cover with water. Soak for at least 8 hours or overnight. This softens them and improves creaminess.
Step 2
Drain the soaked almonds and rinse well under cold water.
Step 3
Add the almonds to a high-speed blender with 750ml fresh water, the sea salt, and vanilla. Blend on high for 30–60 seconds until completely smooth.
Step 4
Pour the blended mixture through a nut milk bag, cheesecloth, or fine sieve into a jug or bowl. Squeeze firmly to extract as much liquid as possible.
Step 5
Transfer the milk to a clean bottle.
Chef's Notes
- Lasts 3-5 days in the fridge, make sure you shake the bottle before serving
- Save the strained almonds for your porridge, or a healthy cake or freeze until ready to use.
